The owner-chef learned the basics of Edomae cuisine in his native Hokkaido before honing his skills in Tokyo. So that customers sense the fragrance of the sushi the moment they put it in their mouth, this sushi master finds the temperature for each sushi topping that most accentuates its flavour. To keep the flavours interesting, the first sushi he serves after the snacks is red-fleshed fish, before the sourer flavours of the white-fleshed toppings.
