MICHELIN Guide’s Point Of View

The chef learned the artisanal frame of mind and the Edomae technique from a strict master chef. The rice is cooked firm in a broad-brimmed pot so that it properly absorbs the akazu and ume vinegar. The meal follows the orthodox flow, starting with white-fleshed fish and then proceeding to three tuna items and then to vinegared gizzard shad. The large pieces and the sweetness of the nitsume and kanpyo are in keeping with classic tradition.
