MICHELIN Guide’s Point Of View

The chef studied under Joël Robuchon who was named ‘Chef of the Century’. He pursues next-generation French cuisine based on the concept of carrying on tradition but with modern innovation. He makes effective use of Japanese ingredients in addition to French ones to express the season. A classic dish with an original interpretation, the ‘Racan Pigeon Breast Chaud-Froid’ is a typical example.
