MICHELIN Guide’s Point Of View

The owner-chef follows the Edomae tradition, and actively studies tempura ingredients and oils. He puts special effort into the ageing of seafood. Squid and sillago, for example, are aged for several days to remove moisture and draw out flavour. Kobashira is prepared kobujime style to enhance the flavour before frying. Standard at the end is tuna chazuke with sesame sauce. Punctuality is a must as all guests are served at the same time.
