MICHELIN Guide’s Point Of View

Unpolished buckwheat is purchased mainly from a trusted farmer in Hokkaido. The self-milled juwari soba is thin and goes down smoothly, and the rich dipping sauce is made with edomae-style sauce in mind. In addition to seiro soba, chilled kaki soba is popular in summer and kamonanban soba in winter. Two kinds of buckwheat from different areas are available, so you can also order both and compare them.
