MICHELIN Guide’s Point Of View

The tonkatsu is made only with pork loin and tenderloin, from which excess fat is removed to bring out the true flavour. Medium- and low-temperature lard is used depending on the meat, which is cooked slowly. The light-textured batter is robust in flavour, and the meat inside is juicy and tender. With the pork loin, the flavour of the fat and red meat is enjoyable. The tenderloin is characterised by the meaty juices that fill your mouth with every bite.
