MICHELIN Guide’s Point Of View

The owner-chef shows off his skills using seasonal ingredients from all over Japan. He visits the production areas himself and has built relationships of trust with the producers. The dishes are based on tradition but also feature various original touches. Prime examples are the mukozuke served on two plates according to preparation technique and the hassun with its seasonal presentation. Enjoy hearth-cooked rice with side dishes like sukiyaki and grilled fish.
