MICHELIN Guide’s Point Of View

Owner-chef Mahito Owatari’s approach is about bringing original touches to classic cuisine. The wonders he weaves with his ingenious combinations of ingredients make for memorable dining. In spring, white asparagus dressed with kinome miso is used in place of bamboo shoots. The meal ends with an enjoyable zosui made by adding leftover broth and other ingredients to rice. Owatari’s service is cheery and light-hearted, and it shows in the customers' relaxed smiles.
