MICHELIN Guide’s Point Of View

The unique menu is where the owner-chef puts to work his experience with French cuisine. The meal starts with an appetiser that incorporates 20 different kinds of Kyoto vegetables and Western vegetables into a salad of sorts. The ‘foie gras awabi’ speciality is inspired by terrine. He serves white rice cooked on a traditional stove at the end to best convey the quality of the ingredients. Also popular are the various sweets to choose from, including mille-feuille and fruits in syrup.

Initiatives

We contribute to the effective use of limited resources. We do our best to buy vegetables that are not to market specifications. We take scrap timber from shrine carpenters and reuse it as a heat source for the stove.
