Matthias Marc – a chef who has honed his skills in a series of prestigious establishments (Le Saint-James in Bouliac, Le Meurice and Lasserre in Paris), and was a semi-finalist in French TV's Top Chef 2021 – serves a single set menu (five, seven or nine courses) that favours short supply chains and fine ingredients (turbot, bonito). The dishes stick close to the seasons and incorporate pleasing nods to his native Jura. Gnocchi cooked with plant charcoal, coulis of fermented watercress and Morteau sausage jus or lobster, cherry tomatoes coated in marrow bone and jus infused with geranium serve to illustrate his creative and readily plant-based signature style. A terrific list of 1 000 wines (including 200 champagnes), mostly organic or natural. Uninhibited, lively cooking: an excellent place.
