"Bloom" is an apt name for a restaurant that serves plant-based sushi! Crispy breaded rice delicately dressed in vinegar, brunoise of shiitake, oyster mushroom and avocado, futo maki and pesto sauce, vegetable gyoza with kimchi sauce: Mexican chef Christian Ventura is committed to protecting natural resources and has risen to the challenge thanks to an array of delicious and dynamic dishes. Ingredients selected from small producers, including for the cocktails, a natural wine list and a fine range of sake. The serene interior plays on different textures of wood.
