MICHELIN Guide’s Point Of View

The chef approaches the ingredients, which are the fruits of nature’s bounty, and the producers, with an attitude of respect. He makes a point of keeping up communication with farmers, going to meet them, along with his staff, from time to time. He puts much effort into tending the heat when cooking meat, and has installed a stone oven in the kitchen. Using kishu-binchotan, he grills the wagyu, gamecock and other meats over a direct flame to trap in the flavour.
