MICHELIN Guide’s Point Of View

Nicknamed ‘Katsuo-chan’, Mai Nagamatsu, loves katsuo, and is a self-styled katsuo-bushi evangelist. She visits the producers, gets on pole-and-line fishing boats and ‘“migrates” with the katsuo. Standing in front of the shaver, she has a stage actor’s presence. A generous portion of fresh katsuo shavings tops rice cooked in an earthenware pot. You’ll find the spirit of Japan here, the owner-chef carrying on what her grandmother loved.
