Got Stale Bread? Shake Up This Zero-Waste Kavring Manhattan and Wow Your Guests

It's no secret that green is the new black, but going eco-friendly shouldn’t feel like a chore—it should be fun, sexy, and easy for everyone to adopt. So, next time you’re hosting friends, ditch that bottle of organic wine and shake things up with a zero-waste cocktail that'll knock their socks off.

Enter the Kavring Manhattan, a drink created by Gabriel Valdés, the Swedish Bar Manager at the MICHELIN 2024-selected Villa Frantzén Cocktail Bar, located in a former mushroom farm in Yen Akat, south of Bangkok.

Valdés brings a Swedish flair with Villa Frantzen’s Kavring bread, a Swedish staple that often makes an appearance at festive spreads for Christmas, Easter, and Midsummer. But what happens when that loaf goes stale? “Instead of tossing it, give it a second life by turning it into a flavour booster for your next cocktail,” says Valdés.

“With its natural sweetness from sugars and molasses, Kavring pairs perfectly with whiskey, adding a rich, smooth texture. The Kavring infusion whiskey adds a sweet and slightly spicy depth to the cocktail, complementing the bitters and enhancing the overall experience, creating a unique taste and finish of the drink.”

Kavring Manhattan

Ingredients:

  • Kavring bread (or bread of choice)
  • Bourbon whiskey
  • Sweet vermouth
  • Angostura bitters
  • Crushed ice
  • A cherry or orange peel
  • A champagne coup or cocktail glass of choice

Instructions:

  1. Cut the Kavring bread into small pieces and soak them in Bourbon whiskey for a few hours or overnight to infuse. For instance, use 2 parts whiskey to 1 part Kavring bread broken into pieces.
  2. Strain the whiskey through a fine-mesh sieve or cheesecloth to remove the bread pieces, ensuring the liquid is smooth and free from crumbs.
  3. Combine 50ml of the Kavring whiskey, 25ml of sweet vermouth, and 2 dashes of Angostura bitters.
  4. Stir with plenty of ice and strain into a chilled cocktail glass.
  5. Garnish with a cherry or an orange peel.
  6. Enjoy!

Tip from the bartender

  • Don’t have Kavring on hand? No worries—leftover croissants, sponge cake, brioche, or any sweet bread will work as a treat for this recipe. It’s as cool as it is sustainable. With this eco-conscious twist, you can channel your inner Captain Planet while still being the life of the party.
