MICHELIN Guide’s Point Of View

Chef Thomas Danigo (formerly of Laurent and Le Sergent Recruteur) is in charge of the menu for the restaurant of this emblematic Saint-Tropez establishment, situated in the eponymous neighbourhood looking out to sea. The cuisine is Mediterranean, giving pride of place to the catch of the day and vegetables from the region, alongside some quality meats. On this day, ceviche of sea bream, citrus fruits and coriander-basil sorbet and, for dessert, roasted figs with apple balsamic and myrtle, almond crumble and pistachio ice cream.
