Spectacular seafood is a given: staple luxuries like bluefin tuna and uni are flown in weekly from Kagoshima market, where the team has a personal buyer. And while the meal may start off with familiar flavors, as in toro tartare with pickled young ginger, crisp nori and freshly grated wasabi, this is anything but a conventional omakase experience. Instead of the typical parade of nigiri, dishes offer unique combinations of Eastern and Western culinary sensibilities, like smoked unagi on a crisp potato mochi with herbed labneh and yuzu kosho.
