MICHELIN Guide’s Point Of View

Every morning (‘assa’ in Japanese) the young chef, Anthony Maubert, and his partner, Fumiko (a trained pastry chef) rewrite the daily menu. Freshness is not the only plus point of their cooking, which is bold, expertly done and packed with flavour. Even the view over the Loire becomes imbued with a very Japanese poetry.

The chef's commitment
Our producers, all located within a 20-minute radius of the restaurant, have in common a respect for their land and their animals. We use all the pieces of our animals, which we buy whole, and explain to our customers that we do not sacrifice an animal just for the best pieces. All crates are returned to the producer: we do not throw away any packaging. The minimal food waste from the restaurant is consumed by our hens.

Le cadre extérieur n'est pas superbe, mais dès la porte d'entrée passée, tout ve bien. le cadre est sobre et raffiné. Le service est cordial, enjoué, présent mais sans aucun insistance. Les plats sont étonnants, et extrêmement bien présentés. Ma palme de la surprise au granité de foie gras, la palme du meilleur gout au bouillon de bonite. Le mélange des saveurs asiatiques avec les ingrédients plus traditionnels (foie gras par exemple) est subtil.
