MICHELIN Guide’s Point Of View

Gaëtan Gentil, formerly of Agapé Substance, is at the helm of this restaurant, complete with a green wall, in the city's Presqu'île district. He creates his "uncomplicated gastronomy", full of lightness and creativity, and encompassing all the dimensions of the meadow: herbs, vegetables, cattle and lake and river fish. A real pleasure.

Sustainable gastronomy
In addition to our own permaculture vegetable crops, we use local produce sourced from small, responsible farms. We cook only wild, sustainably caught fish, and our wine list comprises exclusively natural wines. Finally, we limit the use of plastic as much as possible.
