A tea ceremony where Japanese sweets and tea are made for each other. The confectioner demonstrates his skills with pastries while the tea master draws tea one cup at a time for each item. ‘Hyoro’ is charcoal ice cream; ‘Rikyumochi’, a sesame rice cake favoured by wabi-cha founder Sen no Rikyu. Next to come is the main cake, followed by matcha tea. In deference to Sen no Rikyu, the patisserie is named ‘999’ (pronounced ‘kukuku’), one less than a thousand (‘sen’), and in hopes that the tea ceremonies can make one giggle (also ‘ku-ku-ku’ in Japanese).
