In this resolutely contemporary space, choose between the impressive wooden bar counter from where guests can view activity in the kitchen, or more conventional tables for those preferring a more intimate dining experience. The cuisine of chef Hideki Matsuhisa, which brings together Japanese techniques and Mediterranean ingredients, always focuses on well-conceived pairings and a hint of creativity. One dish of particular note is the mouth-watering Tataki of A5 Wagyu, with caramelised soy sauce, creamy morel mushroom rice, Wagyu fat and veal jus.
