The chef, who cheerfully waves at diners from behind his counter, reverently respects tradition and the ingredient. Everything, from sashimi of salmon or warm chawanmushi of shrimp and asparagus to tuna sushi prepared to order, bears witness to his consummate technique and passion for authenticity. Something of a culinary landmark courtesy of its long-established position, it has added a soupçon of Japanese serenity to the Belgian capital.
