As you enter this restaurant, your world becomes a little topsy-turvy, with a grand piano suspended from the ceiling and upside-down chandeliers. But take one bite of the creative French cuisine and all will be right again. Protégés of the eponymous Jean-Michel Lorain produce the Memoirs and Wonder set menus with one eye on sustainability, using almost entirely Thai ingredients while retaining a French heart.

"Our intentions and goals were clear, we wanted to totally change our cooking approach and take a stand on the fact that any restaurant – even when located in a pre-existing structure not originally designed to be ecologically driven, and in a market that demands luxury over quality – can change their practices successfully in order to be sustainable and reduce their footprint."
