Chef Masakazu Hiraki’s aim is to create Italian dishes showcasing the appeal of Japanese ingredients. His work is a cross-fertilization of the knowledge of Japanese farmers with his own experience in Italy, particularly in the Veneto region. Vegetables and fruit bring lively colour to simple, modern fare. His devotion to the good things of the earth manifests in his restaurant’s name, which means ‘harvest’. The stunning view from his dining room atop a 33-floor building adds to the feeling of spaciousness.
