Small shop
This katsuo-bushi shop opened with a mission to bring to the world the joys of dashi. The flavoursome soup of the shop’s ramen is a combination of seven types of shaved bonito, kombu, seafood such as grilled hamo, and chicken bones. The noodles are made on the premises, with whole wheat flour kneaded into the dough for smoothness and texture. It’s great to get to choose between round and flat noodles. A shake or two of sansho adds a refreshing fragrance to the meal.
