Young and talented chef Benjamin Breton has brought a breath of fresh air to the city’s restaurant scene and is definitely one to watch! His Nordic-inspired cuisine respects local provenance and celebrates local products, which he transforms with his palette of refined technical skills, in particular fermentation.
