"We buy our supplies from local producers, who incorporate xour needs into their crop plans. Use of organic produce; cellar for growing mushrooms as part of an urban agricultural project to favour short supply chains, as for the herbs grown on the kitchen roof. Vegetarian set menu to support the alternative of a less meaty diet. Sorting waste to separate out compostable waste, which is recovered by an association."
