Established by a couple that’s made something of a career of restoring historic edifices, the Hôtel Entraigues begins with a building that’s more than 500 years old, next to the town’s majestic neo-Romanesque cathedral. The exteriors, as you’d expect, have been meticulously preserved, but the hotel’s interiors add a harmonious contemporary note, outfitted as they are with minimalist, modernist furniture and lavish mosaic-tile bathrooms. A rooftop terrace with a panoramic view and an outdoor pool are among the atmospheric public spaces, and beyond breakfast there’s a bar serving local wines and Spanish-style tapas.
