Den is a messenger of Japanese cuisine today, both in Japan and around the world. The goal is cooking that brings smiles to everyone’s faces, no matter where in the world they’re from. A salad called ‘Hatake no Yosu’ is the next evolution in takiawase, each vegetable cooked in a different way. A carrot medallion, carved like a smiley emoji, evokes a chuckle. Friendly service makes diners feel at home and food taste even better – no wonder the walls and pillars are festooned with autographs of appreciative visitors.
"Thanks to the support of producers, the vegetables we use are grown without pesticides or chemical fertilisers. Our speciality salad expresses our connection to farmers and is a fun way for diners to see what came out of the garden. We source fish without specifying the kind so as to reduce the burden on fishing grounds."
