Fiocchi means ‘snowflakes’ or ‘crystal’, an apt metaphor for that moment when great taste fills our mouths. Lamb wrapped in straw—a dish rooted in Waldensian communities of Piemonte—is served with potatoes baked in ash to draw out sweetness.
