This former foundry, now a delightful restaurant, is set in a picturesque hamlet on the banks of the lake of Uza. The dining room sports workshop-style windows, rust-coloured tiling and comfy armchairs and leads onto a terrace overlooking the lake. The youthful chef, who honed his consummate technique at Auberge du Prieuré in Moirax, delivers creative cuisine based on a single set surprise menu that can be rolled out in different versions: girolle and brown mushroom ravioli in a frothy hazelnut concoction; veal fillet, raspberry vinegar-flavoured gravy and a harissa of sweet peppers from the Landes.
