Shojin ryori is a vegetarian cuisine in the Buddhist monastic tradition. It is a part of Buddhist ascetic practice, said to cleanse the soul, suppress worldly desires and promote spiritual growth. It is said that pouring one’s heart into one’s cooking is the secret to true shojin ryori and an act that expresses gratitude for all people. "Shojin-ryori originated with the strict diets of Buddhist monks. This vegetarian cuisine is eco-friendly; because it uses no meat or fish, a diet of shojin-ryori reduces carbon dioxide emissions from animal husbandry and protects threatened marine resources. Eschewing food waste, the restaurant repurposes food cuttings as compost. Throughout the menu runs a subtext of the preciousness of nature."
