Isma'il and Inès Guerre-Genton (formerly of Empreinte in Lambersart) can now be found in Ardres. Behind a spruce façade on the town's main square, the interior is elegantly understated: a palette of cream and beige tones, brushed walls, sand-coloured light fixtures and immaculate crockery. In the kitchen, the chef remains true to his style, with a single set menu that echoes the stages of a flower's development – bud, bloom, achene – and personal dishes with bold flavours. The top-notch ingredients are local and seasonal (line-caught fish, chicken from Licques Volaille), the presentation is always meticulous and the genuine commitment behind each dish is palpable. The sauces are a delicious leitmotif – green pepper on the starter, delicate fish jus, an intense poultry jus – revealing painstaking work behind the scenes.
