Here, the mountains reign supreme: the vertiginous journey to reach this historical farmhouse with a panoramic terrace, fireplace and creaky wooden floors, but most of all when it comes to the food. Herbs, flowers and aromatic plants are the focal point of this inspired cuisine that scrupulously respects the seasons, the landscapes and those who work in them. Examples of this vegetable-based cooking include beetroot confit, seed praline and red berries; buckwheat noodles with king trumpet mushrooms and aubergine. A carefully curated wine list and the possibility of making your own alcohol-free plant-based beverage.
"My team and I like to work with produce that comes directly from our mountain. We forage for flowers and plants ourselves, cultivate our own herb garden and use animal products that are particular to our region. We prepare herbal extracts and kombuchas in-house and school our staff in our philosophy."
