MICHELIN Guide’s Point Of View
One Star: High quality cooking
One of the meanings of ‘nôl’ is a contraction of ‘new normal’. Tatsuya Noda’s dream is to care for people and the environment while pursuing a new standard for the future. Perhaps that is why he refers to the dining room as a ‘kitchen space’. Taking cues from his childhood, such as his grandmother’s pickles and his mother’s roasted rice, he interweaves the food cultures of France and Japan. Meals conclude with vegetable soup to settle the stomach—a fun novelty that won’t be forgotten.
Gastronomy & Sustainability
MICHELIN Green Star
"The dish, made from vegetable ends and named ‘Garbage Soup’ is a message to society. Compost is delivered to farmers for recycling. To reduce food loss, domestic sturgeon, a fish for which there is no demand, is used in cooking, thereby boosting its value."
