MICHELIN Guide’s Point Of View

The owner-chef conveys the appeal of sake paired with food. He selects the sakes himself and has a wide selection of brands from all over Japan so that customers can try various ones. It’s also fun to tell him what you like and let him choose one for you. The meal is a set including several delicacies and tsukuri. He adds an extra touch to sashimi by searing or maturing the fish. Dishes like liver pâté and ratatouille are also appealing and reflect his study of French cuisine.
