In winter, the masterpiece of the house is quail-and-lily-bulb dumpling with black truffle paste; in early summer, there is sorbet of passion fruit and wasabi. Accentuating Japanese cuisine with Western culinary elements is the epitome of ‘tradition and innovation’, as advocated by Kikunoi Roan.
