Romans have perfected the art of eating well. It's no wonder the Eternal City has a selection of exceptional hotels with fine dining on-site—where MICHELIN Key stays meet MICHELIN Stars. From design-forward 16th-century residences to aristocratic palazzos with Colosseum views, these stays promise an unforgettable experience. Whether you're in Rome for the ruins or the rigatoni, these hotel restaurants deserve a spot on your list.

Hotel Vilòn (Two MICHELIN Keys) and Adelaide

Via dell'Arancio 69

This 16th-century private residence adjacent to the Palazzo Borghese was home to a nunnery for much of the 20th century. Today, it boasts 18 guestrooms designed by Milan-based architect Giampiero Panepinto and decorated by interior and set designer Paolo Bonfini.

At Adelaide, Chef Gabriele Muro whips up specialties from his native Campania alongside typical fare from his adopted city, with plenty of pasta specialities like carbonara, cacio e pepe, and a perfectly spiced amatriciana. The presentation is as beautiful is the warm, maximalist space.

Nearby: art and shopping. Tridente and luxury shopping, the Ara Pacis (Altar of Peace) and the Caravaggio paintings in Santa Maria del Popolo

Likewise, at the MICHELIN-Starred rooftop restaurant Imàgo, you can gaze on the city's most iconic landmarks while tucking into dishes from Chef Andrea Antonini: like spaghetti with sea urchin and pecorino, and "Milanese" style squid. With sommelier Alessio Bricoli's carefully curated cellar of 1,500 labels, you'll be saying cin cin

Hotel Eden, Dorchester Collection (One MICHELIN Key) and La Terrazza

Via Ludovisi 49

Tucked between the Villa Borghese and Via Veneto, Hotel Eden is the epitome of charm and sophistication. When it opened in 1889, it was the first Roman hotel to feature an elevator, electricity, heating, and running water. The local press praised its views over the city and surrounding countryside.

Today, the amenities are decidedly modern, but the views are as breathtaking as ever, especially from La Terrazza. There, Chef Salvatore Bianco's imaginative menus are grounded in local terroir and offer diners contemporary takes on Italian fare: like cuttlefish with seasonal vegetables and roasted pigeon with puntarelle chickory and broccoli.
