Thierry Schwartz, who describes himself as an Alsace native at heart and by birth, believes that nature's rightful place is at the centre when it comes to cooking. This ethos is borne out by his commitment to local producers and by his title of Knight of France's Order of Agricultural Merit. To set the scene: think lots of wood, nods to nature, seasonal vegetables on display, and a log burning fire. Thierry concocts three remarkable set menus in which the produce (from Alsace and permaculture) is sufficient in and of itself: pure spelt, arctic char, wild sorrel, organic farm eggs... to be washed down with a fine, natural wine. The choice is yours – from the 1,500-strong bin!
Gastronomia e sustentabilidade
"Since the opening of the restaurant 18 years ago, short supply chains have been our priority: 95% of our products come from less than 50km away. We contact our market gardeners and breeders every day and take their produce when it reaches maturity. Our menu changes twice a week. A large majority of our producers work in biodynamic farming and we encourage the reintroduction of old varieties of fruit and vegetables. We process waste with a "zero waste" objective."
