Den is a messenger of Japanese cuisine today, both in Japan and around the world. The goal is cooking that brings smiles to everyone’s faces, no matter where in the world they’re from. A salad called ‘Hatake no Yosu’ is the next evolution in takiawase, each vegetable cooked in a different way. A carrot medallion, carved like a smiley emoji, evokes a chuckle. "Thanks to the support of producers, the vegetables we use are grown without pesticides or chemical fertilisers. Our speciality salad expresses our connection to farmers and is a fun way for diners to see what came out of the garden. We source fish without specifying the kind so as to reduce the burden on fishing grounds."
