Ineffable is nestled in this small, Provençal village with bags of character. The restaurant is run by Nicolas Thomas and Marie Salomez (previously of restaurants La Promenade, La Flibuste, Château de Courban), a couple who used to be professional musicians. (Hence the name, which is the very essence of music, according to French philosopher Jankélévitch.) Their place has whitewashed walls, a beamed ceiling decorated with artificial vegetation, contemporary furniture and soothing birdsong in the background during the meal (a tribute to French composer and ornithologist Olivier Messiaen?). The chef's poetic culinary path freely combines olives and olive trees, plants and seafood (and even meat on the large set menu). This music lover has a sense of structure and harmony, as demonstrated by his vegetable composition topped with a smoked cream.
