MICHELIN Guide’s Point Of View

This ‘mountain retreat in the city’ with candles on the tables aspires to a sense of oneness between server and served characteristic of the tea ceremony; it opens new frontiers in Japanese sensibilities. Out of respect for nature and cultivators, the chef, Mr. Shinobu Namae, has his cuisine reflect the localities that he visits. Typical dishes are ‘Artisanal Vegetables’ and ‘Turnip’. To end he serves guests tea in the style of the Sowa school of the tea ceremony.
