MICHELIN Guide’s Point Of View

The head chef has established his own style that he calls 'meat kappo '. Drawing on his experience with Japanese cuisine, he serves various parts of wagyu in a kaiseki flow. The meal starts with consommé soup made with dashi from tendon and shank. Other standard dishes include seared beef and soused fillet. We also recommend the Kobe beef shabu-shabu and the steak dish, which features a fillet and sirloin which you can compare as you dine.
