MICHELIN Guide’s Point Of View

The two characters on the sign form Masaaki Senzaki’s motto, and the brushwork is by his grandfather, well versed in Chinese poetry. The saying is by Mencius and enjoins putting one’s all into living a virtuous life. Senzaki uses ingredients at the peak of their season rather than first harvest ones. Being from Karatsu, he uses Saga specialities such as beef, rice and local sake. He also communicates the appeal of his hometown by using serving dishes from Imari and Karatsu.
