In stark contrast with the austere façade, the plush interior is adorned in warm wood and colourful works by local artists. The head chef has focused on Hangzhou and Jiangzhe cuisines throughout his career that spans over 30 years. In his 10-course set menu, he reinvents traditional recipes with modern European techniques using produce from around the world, such as Hakka pickles and Japanese seaweed. Tea pairing brings out the best in the dishes.
