To bring out the soft texture of the pork, the meat is fried at a low temperature, using vegetable oil for a light finish. The calligraphy on the wall reads ‘The pork looks bigger on your neighbour’s plate’—a tonkatsu version of ‘the grass is always greener on the other side of the fence.’ Something to share a smile about while you wait for your order.
