Whole truffles are on offer here, and indeed ‘Margotto’ is a creative spelling of marugoto, ‘the whole thing’. The concept is revolutionary: guests can choose a single bead of the truffle of their liking. The chef brings his Japanese cuisine experience to bear on a base of French cuisine.
