Dominique Bouchet formerly commanded the kitchens at Paris’ fabled Tour d’Argent and Hôtel de Crillon. After opening his own restaurant in Paris, he expanded to Tokyo, a city he’s developed a close relationship with over many years. The theme here is ‘passing on tradition’. Dominique Bouchet reconstructs in a modern style the classic forms he has pursued throughout his career.
