Tadashi Michino has been a driving force in Kansai’s French-restaurant community, powered by his avant-garde spirit. Michino ran a restaurant focused on vegetables before his current project, in which he partners with a biologist to explore the future of food. ‘Tourbillon’ means ‘whirlwind’. Being a chef is life itself, he says, and he is determined to always be a fresh wind that stirs up change and moves people’s souls.
