The accent here is on sustainable, regional cuisine, the very epitome of “nose to tail” eating. "I find the terms "regionality" and "seasonality" are overused. I put my money where my mouth is, with organic produce from Gut Wulfsdorf, as well as urban gardening around the restaurant. The season dictactes my menu and the meat is not only labelled Demeter!"
