MICHELIN Guide’s Point Of View

This restaurant was opened by the owner-chef of the Yakitori Imai restaurant next door. He uses mostly pork loin and tenderloin from Yamagata. The meat is full of flavour with a nice balance of fat. The tonkatsu is fried slowly in lard at a low temperature so that the meat is tender despite being cut thick. He is also particular about rice and brings out its sweetness by transferring it to a wooden container after cooking it in a broad-brimmed or earthenware pot.
